Vegetarian Pasta

Ingredients You'll Need:

1 - 2 lbs zucchini (summer squash)
red onion
other squash (optional)
red bell peppers (optional but recommended)
green bell peppers (optional)
mushrooms (optional)
Portabella mushrooms (optional, really good, expensive)

Pantry Items:

minced onion
garlic powder
pepper
and any other seasoning (salt?) you prefer

1 - 2 lbs dry pasta
(Rotelle, Rigatoni, Spagetti or Lasagna noodles)

2 - 4 26 oz jars of tomato based pasta sauce
(your own pasta sauce preferred)

Cooking Instructions:

Wash, slice and cut the squash and the other vegetables accordingly.

Season the vegetables and the minced onion with garlic powder and pepper.

For the sauce:

Add the fresh minced garlic and the vegetables to a skillet
and simmer the pasta sauce on low heat.

Then, in a pot, add the pasta and bring to a boil,
and add the garlic powder and pepper to the boiling pasta.

Boil the pasta per the directions on the package
and cook the sauce thoroughly, but don't overcook it.

Steam the seasoned vegetables gently,
and don't overcook them, 2-4 minutes more, maximum.

strain and dump the pasta, vegetables,
and sauce into a big bowl, mix and serve.

Note:

For you non-vegetarians, cube up some cooked chicken breast,
or grilled Italian sausage and add it to the mix.
